Vegan Banana Pancakes

When I say I have been having these pancakes everyday for the last year, I would not be lying! There was a time right after I had Isabella when I was having these in the morning AND in the afternoon as a snack! Even Isabella reaches out her hand to have a bite ( check out my recent post on Instagram of her devouring them 🙂



*Makes 4 pancakes

  • 2 cups of organic rolled oats
  • 1 cup water
  • 1 cup non-dairy milk
  • 1 tbsp of shredded coconut
  • 1 tsp of flaxseeds
  • 1 banana
  • 1 tsp coconut oil



  1. Oil the pan and place it on medium-high heat
  2. Place all ingredients in a blender, I use my nutribullet as I find it perfect to make this quantity of pancakes
  3. Pour the mixture into the pan dividing it into 4 pancake shapes
  4. Cook for 5 minutes on each side

I top it with peanut butter and date syrup, but you can add anything you like, sahtein!
