The Lebanese cuisine is filled with so many amazing vegan options and this is one of them. I will be in Lebanon next week which is SO exciting, I will make sure to update my instagram (rana.banana) with all the yummy vegan finds!
Traditionally this is made with swiss chard leaves and is called Hindbeh, however it is not so easy to find fresh swiss chard in Dubai so we used Spinach instead. By we, I mean my father and I 🙂

Freekeh! The name alone gets a lot of attention, freaky, get it? Ok ill stop now.
This is one of my absolute favorites dishes growing up, although traditionally it is made with some sort of meat and more oil/ghee/butter, this recipe keeps all taste while lightening up the dish my way 😉
Yes you heard that right, I stuffed my wara’a enab with quinoa. To my grandma this was unheard of, first what the hell is quinoa second where is the meat!!
Nonetheless I went ahead and attempted my first stuffed vine leaves cooking experience and they turned out oh so amazing! I under estimated how tiring it was to roll so many, makes me appreciate all the times I’ve had them and all those women who must have been rolling them for hours! 🙂

I enjoy these on the weekend when I have a little bit more time to cook. My husband is a meat lover so he usually likes to fill these with chicken!
Oh it has always been the little things that excite me. A couple of weeks ago I found out an organic supermarket ‘Bio Organic Store’ (http://www.biorganicstore.com/) has opened up just a 5 min walk from my work and oh was I in for a treat! They have EVERYTHING- fresh veggies,bakery, a cafe and a juice bar! Hence the inspiration for this lovely green recipe
