Spinach Lentil Salad with Date Balsamic Dressing

This is the first valentine I have as a married women and full time vegan! So I wanted to make it extra special and cook a V Day feast at home. I’ve always been that person who thought they don’t need a valentines day to show partners they care, but I have to admit I now see the value in having a special day set out as It’s easy to get wrapped up in the day to day.


So our menu started off with a beetroot soup(not pictured), lentil salad, main dish was ‘ricotto’ stuffed pasta shells and finished off with raspberry sorbet and chocolate covered strawberries

Strawberry Spinach Salad

I’m in countdown mode (7 weeks to go) to my wedding that is 🙂 ! My bachelorette/ hen do happened last weekend and it was the best fun I have had in so long! So many yummy cocktails were consumed 😉  which I might be writing up soon to but for now I need a salad like this to put me back on track!

Green Quinoa Salad

Still in line with vegetarian January, I try to eat vegetarian meals most of the week. I was pretty busy this week so this was the perfect dish to put together in less than 30 minutes. And, this might sound a bit strange, but I am a big fan of brussel sprouts! I usually pile them up on my plate at Christmas dinners!

My family has never really seen them so they call them tiny cabbages 🙂
