Couscous Salad

After all the Eid feasts, I feel salads are much needed to detox. I was away in Beirut for Eid and the food was amazing, not counting all the sweets and all the nights spent dancing and drinking!

Now back to work and Dubai, it is time to get back into the kitchen to create healthier feasts! I’ve always liked a cooked grain or vegetable with my salad, so this and my lentil salad are my two faves 🙂

Homemade Naturally Sweetened Coconut Milk

Anyone who does not have dairy in their diet knows alternative milk can get pricey, especially if you want it to be naturally sweetened and organic. There has been a couple of recipe disasters before this but I have to say I found this to be the the easiest, creamiest and AND much cheaper than a store bought version, so definitely a win!

Also can you ever have enough coconut in your diet? or body? or face! Never.

Chocolate Peanut Butter Date Balls

My ultimate, all time weakness has always been chocolate, I cannot resist it and cannot have enough of it! So when I started my plant based journey it was key for me to ‘healthify’ (Is that even a word?) my chocolate cravings

I love taking these to Iftars I am invited to, gives everyone a healthier option for dessert.

Lentils &Rice (Mdardara)

Whenever my mom is in town I use it as opportunity to learn a new vegan lebanese dish. This time she recommended Mdardara saying it does not get easier than this, and it really doesn’t! Don’t confuse this with the Mjadara which also consists of lentils but is mashed up and uses a different type or lentils. I will leave that recipe for a different post 🙂
